Pear & Feta Salad with Pecans

I have found a delicious and healthy dinner that I absolutely LOVE! I saw a recipe in the new Kraft Food and Family that combined cranberries and pears so I added feta cheese and balsamic vinegar instead bottled dressing. I wish I would of taken a picture to show you how pretty it is! I’ll remember that for next time.

Pear & Feta Salad with Pecans
Serves: 1
6 WW Pts

2 cups Mixed Baby Greens
1/8 cup Crumbled Feta Cheese
2T Chopped Pecans
1 Anjour Pear Sliced Thin
3T Dried Cranberries
1/2 teaspoon Brown Sugar
Tiny pinch of Cinnamon
Balsamic Vinegar to taste

1. Place greens in your favorite salad bowl.
2. Thinly slice the pear and place on top of the greens.(if you aren’t serving this immediately then I would suggest using some lemon juice on the pears.)
3. Sprinkle with feta & cranberries
4. Spread pecans on microwave safe plate and sprinkle with brown sugar and tiny bit of cinnamon. 5. Microwave on high for 45 seconds stirring ever 15 seconds until warm. (The sugar won’t be melted)
6. Sprinkle pecans and remaining brown sugar on salad and then drizzle with balsamic vinegar.

The brown sugar melts into the balsamic vinegar and there is a tiny hint of cinnamon. It’s delicious!
